Modernising a much-loved Irish brand
Pádraig Óg Gallagher set up his restaurant in Temple Bar over 30 years ago, and his offer was simple: a potato-based pancake called Boxty, a forgotten staple of the west. Although he had a steady stream of tourists, Pádraig Óg wanted to build a brand that appealed more to a younger generation of Irish people.
We developed a brand position which focused less on a saturated market of traditional Celtic Ireland and built a brand which was more relevant to modern Ireland. It reflected Pádraig Óg’s passion as a grower, a writer and a chef, and his love for natural ingredients and use of artisan food producers from Ireland.
